The process of evaporation is widely used in the process industries. The present work is to determine the heat transfer parameters of a single effect evaporator under different operating conditions. A single effect evaporator is studied using sucrose solution as feed. The evaporator consisted of 17 tubes having tube diameter and length of each tube is 200 mm and is run at different steam pressures to determine the effects on the outlet liquid and vapor. The performance parameters of evaporator are capacity, economy, and steam consumption. The conditions of the evaporator were determined by varying the feed concentration, volumetric flow rate and pressure. Obtained values were correlated to heat transfer coefficients with the fluid properties, geometric parameters and flow conditions. Comparison with existing correlations was carried out. This work is aimed for utilization by the researchers, industrialists and traditional businesses. Apart from this it will be especially relevant and useful for the students of Food sciences, Mechanical engineering and Chemical engineering for carrying out research in the area of evaporator design and usage.
